Night mechanical harvest cooling after gentle destemming and crushing
Soft pressing and selection of the best juices by tasting
Controlled fermentation temperature . Aging on fine lees
Minimal use of sulphites

TASTING
The color is limpid yellow green glints
In the nose,  aromas of vine and apricot . The agitation reveals flavours of Lily flower
A suave mouthfeel, followed by tasting notes of « banoffee ».
The finale leaves a persistente structure of spices and iodine.

CELLARING PORTENTIAL
2 years in good storage conditions.
